Black Eyed Pea Fritters

These are, for all intents and purposes(or all intensive porpoises), a black eyed pea falafel. You can substitute any dried bean you want. Black, white, chickpea, fava, appaloosa, yellow eyed peas, or whatever else you have lying around. Test fry one to see that it holds together. If not, then add another tablespoon of chickpea flour.

Day 1

  • 1/2# Dried Black Eyed Peas

cover with 3” of water and soak overnight

Day 2

  • 1/2 small onion, rough chop

  • 1/2 cup parsley, chopped

  • 3 cloves garlic

  • 1 Tablespoon chickpea flour

  • 1 teaspoon fine sea salt

  • 1 1/2 teaspoons cuimin, ground

  • 1/2 teaspoon coriander, ground

  • 1/4 teaspoon black pepper, ground

  • 1/4 teaspoons cayenne pepper

Drain and rinse the peas. Add to Cuisinart and grind until smooth, periodically scraping down the sides. Form into 3/4” balls and fry at 375 degrees about 3 minutes each side.
