So the remaining flavorings that I ordered arrived. A powdered version and another extract. I tasted them versus each other and I am excited to use the extract. The powder was fine but a couple of drops of the extract in the top of the jar will be a lot better to deal with than a big ole scoop of the powder. I already figured I knew that, though, after I opened the box and smelled the extract as it was exactly what I was looking for in the first one I bought, and that a little bit would wake the dead. So it's time to make an appointment for another lab day.
Yesterday I played around a bit with the thickeners that the food scientist I am working with developed. I was toying with an idea I had, and while the three variations tasted fine, they are going to sit on the back burner for now while I finish off the flagship sauce. I also bought a large selection of BBQ sauces to taste test. I was a little disappointed to say the least. Most of them were pretty solid, especially at there price points. I make my own BBQ sauces at work, so I've never spent any time looking at ingredients in commercial products. The fact that three of them had water as the first ingredients was a HUGE surprise. I expected all of them to have either vinegar or sweetener batting lead off, but once again, not the focus or my competition currently, so I am not going to waste too much time on it.
I had a nice chat with a gentleman who does consulting for small food companies who deal with grocery stores. He threw out a rather large dollar amount to have ready for when I am trying to get into Safeway/Albertson's. After the initial shock and a quick gut check, I calmed my inner Piglet and reminded myself that I am starting small and in local grocery stores, and not to look so big picture yet. Not that I could push it out of my mind completely, but that I need to just focus on the road directly in front of me for now and worry about that phase when I am fully settled in and running.
In the next couple of weeks I am going to get a photo shoot done with my sauce and some appropriate main dishes and sides that you would serve with it. Probably head up to a higher elevation so I can get some shots with the Wasatch Mountains, the Snyderville Basin, and the Heber Valley, but next week I am going to take a little time and head down to Moab and play in the desert for a minute.
