Sweet Corn Gazpacho

These a very easy and very, very refreshing soup to make in the summer when the temperature is high and so is the sweet corn.  Serve it with  a drizzle of good extra virgin olive oil, diced fresh summer squash, cherry tomatoes, and chiffonaded basil for the perfect taste of summer.

  • 8 ears corn, fresh, cut off cob
  • 2 cups almonds, blanched, lightly toasted
  • 1 large onion, rough chop
  • 4 cloves garlic
  • 4 english cucumbers, peeled
  • 3 Tablespoons diamond crystal Kosher salt
  • 3 cups ½ and ½
  • ½ cup sherry vinegar

Puree in vitamix, and then strain through coarse strainer
