Four Thieves Vinegar

Yes I am aware there are five thieves. No, I am not going to change the name. This is a condiment we use on our Slow Cooked Goat. It’s assertive flavors stand up well to the goat and aged goat cheese perfectly. It is also great on fish and I have used it in the past on prosciutto wrapped cod with Brussels sprouts.

  • 1 cup red wine vinegar

  • 1 cup brown sugar

  • 2 Tablespoons juniper berries

  • 1 Tablespoon lavender

  • 2 Tablespoons garlic, chopped

  • 1/2 bunch Rosemary

  • 1/2 bunch sage

  • 2 teaspoons kosher salt

Bring to a simmer and let steep for 5 minutes. Strain through fine mesh chinoise.
