Honey Balsamic Dressing   

This balsamic works great as a dressing for salad, a dip for vegetables, or even a marinade for red meat or pork that plan on getting a little time on the grill.  Feel free to use corn syrup or maple syrup for the honey or all canola or all olive oil for the oil.  If you don't have fresh thyme don't stress, you can leave it out.  If you don't have access to shallots, onions will do.

  • 2 Tablespoons rough chopped shallots   
  • 1 Tablespoon thyme leaves, fresh
  • 2 Tablespoons dijon mustard
  • 1 cup balsamic vinegar
  • 2 Tablespoons clover honey    
  • 1 1/2 teaspoons kosher salt              
  • 1/4 teaspoon white pepper, ground

Blend together in a Vitamix, then slowly add in

  • 1 cup extra virgin olive oil
  • 1 cup canola oil or other neutral oil
