A Light Vinaigrette
A very neutral dressing, this is perfect for anything that you are looking to serve a salad with and not have it compete with what ever your center of the plate item is, weather that is some baked goat cheese and crostini or the Shrimp, Bacon, and Gruyere Tart.
For the vinegar you can use apple cider or white wine vinegar, and a sprig of freshly chopped tarragon, basil, mint, or even cilantro would be welcome.
- 1 teaspoon, shallots, minced
- 1 teaspoon dijon
- 2 Tablespoons vinegar
- 1/2 teaspoon kosher salt
- 2 Tablespoons olive oil
Whisk together and allow to sit for a half hour. You can use it right away, but the flavor will steep out of the shallots if you allow it to sit for a bit.
